Recipes invited Tex-Mex Style Black Bean Chili, Hearty Mushroom Stroganoff and Zesty Spinach Enchilada Casserole are only a few of the exciting vegetarian entrees offered at the three Humboldt Senior Nutrition Program dining centers. The Nutrition Program launched the vegetarian option in November 2002 to meet the needs of a growing population of seniors who prefer to eat a vegetarian diet. The vegetarian option also adds a second entrée choice to the menu every day. Since its start a year ago, this option accounts for 2.5 percent of all meals served at the dining centers in Eureka, Arcata and Fortuna. The number of people enjoying this second choice is growing each day as word gets around about the great recipes we have developed. In honor of its first year anniversary, we will expand the meal service from a seven-day menu cycle to a 15-day menu cycle. We are not yet able to offer a vegetarian diet to those on home delivered meals.
